かしこまりました。奥のカウンター席へご案内いたします。足元にお気をつけください。

They are led to the sleek wooden counter. The chef bows slightly behind the grill.

Hamada-buchō

さあさあ、ジョーさん、こっち。私の右隣に座って。

Jo

At the polished counter, the chef presents the fresh ingredients on a wooden tray before starting to prep the hot iron plate.

本日の特選コースでございます。まずは玄界灘のヤリイカ、そしてメインには博多和牛のサーロインをご用意しております。

This is today's special course. First, spear squid from the Genkai Sea, and for the main, we have prepared Hakata Wagyu sirloin.

Jo

玄界灘のヤリイカですか。非常に楽しみです。透き通ったイカは、東京ではなかなかお目にかかれませんね。

Hamada-buchō

そうだろう。呼子のもんだけど、博多で食うのが一番美味いんだよ。大迫、ジョーさんに地元の酒をついで差し上げて。

はい。ジョーさん、こちらは糸島の「田中六五」です。すっきりしていて、イカの甘みを引き立ててくれますよ。

お気遣い痛み入ります。いただきます。…あ、本当にすっきりしていて、とても美味しいお酒ですね。

温かいか、うちが? まあ、今でこそこうやって偉そうに飲んでるけどさ、創業期は冷たい風ばっかり吹いてたよ。誰もうちが残るとは思わなかったからね。

Warm, us? Well, although we are drinking grandly like this now, during our founding years, only cold winds blew. Because nobody believed we would still be here.

Inoue

ええ。当時は同業者からも、すぐに潰れるだろうと噂されていたと聞いております。

The chef expertly plates the freshly seared squid with a splash of local citrus sauce, placing it directly onto the warm iron warmers in front of Jo and Suzuki.

お待たせいたしました。ヤリイカのソテー、自家製のカボス醤油でございます。

Thank you for waiting. Sauteed spear squid, served with our homemade kabosu soy sauce.

Jo

いただきます。…素晴らしいですね。カボスの爽やかな酸味と、イカの濃厚な甘みが絶妙に調和しています。

Let's eat... This is wonderful. The refreshing acidity of the kabosu and the rich sweetness of the squid harmonize exquisitely.

Hamada-buchō

美味いだろう!…でさ、最初の数年は本当に崖っぷちでね。それでも「絶対にここで生き残る」って、意地だけでやってきたんだ。大迫、あの頃のお前、毎日青い顔してたろ。

Good, right! ...You know, the first few years we were truly on the cliff's edge. Even so — 'we WILL survive here' — we ran on sheer stubbornness alone. Osako, back then you had a pale face every single day, didn't you.

Suzuki

その意地を貫かれたからこそ、今の強固な信頼を築き上げられたのですね。

Jo

濱田部長のような方がいらっしゃったからこそ、今の御社があり、こうして私どももご一緒させていただけるのですね。深く感銘を受けました。

さて、そろそろお開きにするか。最後に一杯、今日こうして皆で集まれたことに乾杯しよう。さっきも言ったが、誰も残るとは思わなかった我が社が、こうしてここにいる。それがすべてだよ。

何言ってるんだ、お会計はもう済んでるよ。今日は遠くから来てくれたんだ、ここは俺の街、俺のテーブルだからな。

What are you talking about? The bill is already taken care of. You came all this way today; this is my town, my table.

Jo

えっ、そんな、すっかりごちそうになってしまって……。本日は私どもがおもてなしするつもりでしたのに、恐縮です。

Oh, but... you've treated us completely... We intended to host you today, so we are truly embarrassed.

Hamada-buchō

いいんだよ。君たちとの仕事は、これからもっと大きくなる。また今度、東京でごちそうしてくれればいいさ。
